First, test the coolant temp sensor and circuit to see if that is why the engine is dying. If it's bad, fixing it may resolve all of your problems. If it's not bad, your problems are caused by something else (likely a different sensor). Is the check engine light on? If so, have it scanned for codes, but interpreting them with the coolant sensor unplugged might be misleading.

Unless you're ready to delve into learning all about electronic sensors and how to test them, I recommend you take the car to a reputable shop and have them diagnose the problem--probably will cost around $100. From there, you can determine whether you want to perform whatever repairs they find, or have them do it.

The biggest problem in situations like this is making an inaccurate diagnosis, and the added cost of buying parts you never needed.
