Question: Engine idle problems and lack of power

5.7 Liter V-8, having fluctuation problems with engine idle whether in park/neutral. RPM's drop from 1000 down to 500 and then jump back up. When in drive RPM's drop to the point of the engine dying. When the vehicle is having these problems, the acceleration is extremely impeded to the point of almost being a hazard attempting to access a freeway. Transmission is also labored during this time and has great difficulty shifting to the next forward gear when trying to accelerate to highway speeds. The problem also occurs in city driving and is even more prominent due to stop and go situations. In the city the vehicle has great difficulty getting to normal city speeds such as 35 mph. The "Check Engine" light intermittently comes on but will not stay on or at least will not stay on long enough to have the computer code read by a mechanic. Work completed in last month: spark plugs replaced, distributor rotor and cap replaced, air filter replaced, fuel filter replaced, catalytic converter replaced, and muffler replaced. The last thing done was the fuel filter replacement where the mechanic tested the fuel pressure and determined the fuel filter to be clogged. That was on March 7th and today (March 24th) is the first time the vehicle has had any problems since the fuel filter being replaced. From March 7th to today, the vehicle has operated normally.
