Question: Is it truly a head gasket like I was told?

I drive a 2005 Ford Escape. While accelerating after being stopped at a light I noticed the car hesitating a bit. Next thing I knew I white smoke came out the back and the acceleration was fine. Later in the day going home from work I noticed the white smoke again after being stopped. Then I noticed a "knocking/grinding" when I accelerated that would go away after a few seconds. The car has roughly 118,000 on it

It certainly could be. There are specific tests to check to condition of the head gasket. What test have they done?
