Question: New Tires Overinflated--Why??

I bought a set of new tires yesterday. The mechanic set the air at 36 for front and 39 for the rear. My vehicle manufacturer specifically says my car should be 29 in front and 35 in rear so I had to deflate. I asked the mechanic why he added 7lbs of pressure to front and 3 to back and he just said his way was correct, which I don't believe...

Any sincere expert opinions are appreciated-- were the tires dramatically overinflated as I thought and if so, why would the mechanic do this? Thanks
