Question: Spike in RPMs

During colder months my car's RPMs spike (2500 to 3000) when I apply the clutch to shift gears, as if I have pressed on the gas while the clutch is in. Eventually (30 to 60 secs later) it will come back down while the clutch is in. Now while it is in gear at any speed it feels like the car is driving itself because the RPM's are staying high with out me pressing the gas.

The first issue you described sounds like a dirty IAC (idle air control) valve. Cleaning it is a recommended maintenance procedure, so start with that. If that doesn't help, have the IAC tested. Most likely, that will take care of the second problem.
